Recipe - Butter Paneer Masala


Paneer Butter Masala

 

Paneer butter masala is a very famous North Indian curry which is very creamy and delicious and it is enjoyed with naan, paratha and rice etc. addition of cream and cashews in the gravy gives a really smooth consistency to it and soft paneer cubes just melt in mouth.
For every festival or celebration this is a must go dish to enjoy with family and friends, so if you are a beginner in cooking you can follow this recipe it is easy and well explained.

Ingredients


  • 250 gm paneer
  • 2-3 green chili
  • ¼ inch piece ginger
  • 2 medium Tomatoes
  • 1 big Onion
  • 2-3 tbsp. Heavy cream 0r hung curd
  • 1+1 tbsp. Oil
  • 1 ½ tbsp. Butter
  • 2-3 bay leaves, Cinnamon sticks, green cardamom etc
  • 2 tbsp. Sesame seeds (til)
  • 1 tsp. corn starch
  • ¼ cup or 10-12 cashews (soaked in water)
  • Pinch of Asafetida
  • 1 tsp. Cumin seeds
  • ½ tsp. Turmeric powder
  • 2 tsp. Coriander powder
  • 1 tsp. Red chili powder
  • 1 tsp. Garam masala powder
  • Salt as needed


Method


  • Heat oil in a pan, add onions then add green chili and ginger let them fry for few minutes then add tomatoes, let them cook covered for 5-10 minutes till they turn soft and mushy, set aside and let cool
  • Now take a pan heat water and add paneer cubes, it will make them soft and give a nice texture
  • Transfer the tomato onion mix in a blender add sesame seeds and soaked cashews to it and make puree, set aside
  • Take the pan add oil and butter let it get hot then add bay leaves, Cinnamon sticks, green cardamom then cumin seeds and asafetida let them fry
  • Add ready onion tomato puree, cook for about 5-10 minutes and keep stirring in between
  • Then add red chili, turmeric and coriander powder and salt and let cook on medium heat till the mixture starts to leave oil from sides
  • Now add heavy cream or curd around 2-3 tbsp. or to your taste and mix well it will give creaminess to the gravy
  • Keep stirring occasionally then add around 1 cup of water to it and let cook
  • To thicken the gravy, dissolve corn starch in water and add to the gravy let cook on medium heat
  • Add paneer cubes and garam masala powder let cook for 5 mins and turn the heat off

Serve hot with naan or paratha or rice this curry goes with everything. Enjoy!

Note

So here is the way I make butter paneer masala with perfect orange color and creamy gravy. You can also add little sugar if you like but I have not because cashews and cream does give little sweetness and we like it spicy at my home but you can make changes as per your taste.
