Recipe- Vanilla Cupcakes With Buttercream Icing



Egg-less Vanilla Cupcakes With Buttercream Icing

Everyone loves the cupcakes, these sweet treats are delicious and fun to bake. Addition of creamy icing on the top just makes them irresistible. Home baked colorful frosted cupcakes are hit for birthday parties and other occasions and can be prepared ahead to save some time. 
Today I am going to share my simple and very basic egg-less vanilla cupcakes pictorial recipe with step by step instructions which is really easy to make. In this recipe egg is substituted by yoghurt and instead of butter I have used oil.


Ingredients


For Cake


  • 1 ½ Cup All Purpose Flour
  • 1 Cup Yoghurt
  • ½ cup milk
  • ½Cup Oil
  • 1 Cup Sugar
  • ¼ tsp. soda-bi-crab (baking soda)
  • ½ tsp. baking powder
  • ½ tsp. Vanilla essence

For Buttercream Frosting


  • ½ stick/2 oz. /55gm Butter (room temperature)
  • 1 ½ cups icing sugar
  • ½ tsp. Vanilla essence
  • 2 tbsp. Milk
  • Icing color (I have used wilton icing color)
          (Makes enough buttercream to frost 12 cupcakes)

Method


To make Cupcakes


  • Preheat the oven to 350 degrees F
  • Line cupcake tray with paper liners
  • Sift flour, baking soda and baking powder in a bowl keep aside
  • Now in another bowl take yoghurt and sugar and start to beat until mix well with the help of electric mixer or hand whisk
  • When sugar is dissolved add oil and vanilla essence and again beat till mix properly
  • Now take the flour mix and slowly add to the sugar mix and again whisk until the batter is light and smooth
  • Now transfer equal amount of batter to each cupcake liner until half-filled give it a tap to settle the batter
  • Bake them in the preheated oven for 25-30 min after that check with a toothpick insert in the center of the cupcakes if it comes out clean

  • Let the cupcakes cool down before frosting



To make Buttercream Frosting


  • In a medium size bowl take butter and beat on medium speed till smooth

  • Add sugar, milk and vanilla essence mix well and then beat with the help of electric mixer until smooth and creamy adjust with more milk or sugar if needed to achieve desired consistency

  • To color icing take your favorite color and dip a tooth pick into it and mix the color to icing and mix well until uniform or add more color with the help of another tooth pick if needed



Frosting Cupcakes


  • Now fill the ready icing into a piping/pastry bag using the round tip to make simple round swirls

  • Frost cupcakes, decorate with some chocolate on top and enjoy!
