Sabudana (Tapioca Pearls) Wafers
Sabudana wafers are thin light and crispy salty crackers
made with grind-ed sabudana and all-purpose flour, where grinded sabudana gives
the crunchiness. A nice variation to regular savory snacks made at our houses. Perfect
to have with evening tea or for anytime of the day
Ingredients
- ½ cup sabudana (tapioca pearls)
- 2 cups all-purpose flour
- 1 tsp. cumin seed
- 1 tsp. sesame seeds
- Salt as per taste
- Oil for frying
- Fresh cilantro leaves
- 2 big green chili
Method
- Measure half cup sabudana and grind it coarsely
- Now take 2 cups all-purpose flour and in a big bowl and mix the grinded sabudana to it, add salt and mix well
- To make green chutney in a jar take cilantro leaves and green chili add salt and water grind to a fine paste
- Add 4 tbsp. of green chutney to the flour mix, add cumin seeds and sesame seeds mix well
- Make dough by adding little water at a time, dough should not be sticky and not too hard too otherwise it would be hard to roll it out
- Cover the dough and keep aside for 10-15 min
- After that divide the dough and make balls out of it
- Take one of the dough ball and roll it out thin as you want, cut small pieces length wise
- Deep fry them in hot oil until they turn light golden, take them out and serve with tea!
