Vegetable Cutlets
Baked vegetable cutlets are really a good idea to use as
snack because they are full of nutritious goodness of vegetables and contains
no oil, so you can have them without worrying about having too many calories. They are good for
kids too and you can add as many vegetables as you want like; you can also add
spinach, corn or any cabbage to it. So give it a try and enjoy guilt free
vegetable cutlets!
Ingredients
- 2 small Potatoes boiled
- ½ cup Green Peas boiled
- ½ cup grated Carrot
- 4 tbsp. breadcrumbs
- 1 tbsp. corn starch
- 1 small onion chopped
- 1 green Chili chopped
- ½ tsp. ginger grated
- ½ tsp. garam masala
- ½ tsp. chaat masala
- ½ tsp. black pepper powder
- Fresh coriander leaves
- 1 tbsp. oil to grease the tray
- 1 heart shape cookie cutter
- Salt to taste
Method
- In a bowl take the boiled potatoes and peas and mash them well, then add grated carrot and chopped onion, mash everything together to a nice mix
- Now add salt, chat masala, garam masala, black pepper powder, green chili and chopped onion
- Then add breadcrumbs and corn starch to it because vegetables leave water after adding salt, mix well everything and if you still feel the mix is very wet and sticky you can add more breadcrumbs to adjust the mix consistency
- Now start to make round patties then cut in heart shape with the cookie cutter, try to make all of same size
- Grease your baking tray with oil and put all the cutlets on the tray
- Bake at 375 degree F (you can grill or deep fry them too) for 15-20 mins, turn to the other side when done from one side
Serve hot with tomato sauce or coriander chutney!
