Sabudana Khichadi
Tapioca pearls is generally Known as SABUDANA in
India and it is prepared from Tapioca Root. I am from M.P. India where it is very popular and consumed as fasting
food. Sabudana khichdi is very tasty and filling dish and even available as a staple food during fasting days.
Ingredients
- Sabudana (Tapioca Pearls) – 1 cup
- Boiled and slightly mashed potato - 1 cup
- Peanuts roasted and coarsely grinded - ½ cup
- Cumin seeds – 1 tsp
- Green chili chopped - 1
- Peanuts - 2 tbsp.
- Black pepper – 1 tsp
- Sendha namak (Rock Salt) as required
- Oil to fry
- Sugar – 1 tsp
- Lemon juice – 1 tsp
- Freshly Cut Coriander Leaves to garnish
Method
- Take the tapioca pearls/ sabudana in a bowl, wash them and leave a little water keep aside for 2-3 hours and let them soak the water
- Heat oil in a pan and cumin seeds, peanuts, green chili and let them fry for few minutes
- Now add boiled potato, salt and black pepper and mix well
- Mix sabudana, roasted peanuts and let cook for few minutes
- Add sugar, lemon juice, and garnish with coriander leaves
- Serve with curd and phalahari mixture!
