Baked Samosa- Indore Style
Baked samosa/potato puff/veg puff/potato patty, there are so
many names for this dish in different regions. It is the best snack recipe full
of crunchiness and full of taste.
In Indore, India they have a special type of preparation where they
add yummy chutney , sauce, chopped onion and Indori Sev to it which makes it
different from other ones. Here I am describing the recipe to make these Baked
Samosa in Indore style. So far you ate these from bakery shop, now give it a try at your home! Hope you will enjoy it.
Ingredients

For potato filling-
- 2 cups boiled and roughly mashed potatoes
- 1/4 tsp cumin seeds
- 1/2 tsp mustard seeds
- 2 green chili, finely chopped
- Fresh coriander leaves to garnish
- Salt to taste
- 1/4 tsp turmeric
- ½ tsp Red chili powder
- 1 tsp coriander powder
- 2 tbsp. oil
For Indore style preparation
- Tamarind Chutney
- Tomato ketchup
- Green chili sauce
- Chopped Onion
- Indori sev
Method
To Make Filling
- Heat 2 tbsp. oil in a frying pan, when hot add the mustard seeds, add the cumin seeds and let them fry lightly. Add green chills, after 2 minutes add turmeric, coriander powder, red chili powder sauté for a minute then add the mashed potatoes and sauté for a couple of minutes
- Add coriander leaves and turn off the heat and allow the potato mixture cool down
To Make Baked Samosa
- Defrost puff pastry sheets until they are soft enough to work with.
- Preheat oven to 400 degree F
- Cut the pastry block into squares
- Now take one pastry sheet and roll out using a rolling pin trying keep the square shape
- Put the potato filling to the sheet
- Fold over to make a triangle shape and seal with a flour paste (all-purpose flour and water) and press the edges
- Put them in a tray and bake for 15-20 minutes in the oven at 400F until golden brown
Indore style preparation
- Let pastries cool a few minutes and then with the help of sharp knife open up the pastry and apply a little tamarind chutney, tomato ketchup and green chili sauce
- Now add some chopped onions and sprinkle the Indori sev to it
- Your Baked Samosa in Indori style is ready to be served,
