Kaju Katli (Cashew Burfi)


Kaju katli is an Indian sweet made of cashew nuts. You will find it in home at almost every festival including Diwali, Rakhi or any other occasion. This dessert is everybody’s favorite in India. As this sweet is so special , we have an impression that it must be hard to make it at home. But to surprise it is very easy to make. Here is my step by step recipe.



Ingredients


  • Cashews 1 cup/ 225 gm
  • Sugar 50 gm
  • Water 2-3 tbsp.


Method


  • Put all the cashews in a blender and make fine powder
  • To make the sugar syrup take a pan and mix water and sugar together and let it boil on high flame
  • Sugar will get melted and in few minutes syrup will be in nice uniform consistency
  • Add the powdered cashews to the syrup and mix it well
  • Keep stirring continuously
  • Mix will start to form a dough like consistency
  • Remove it from pan and knead a little
  • Place the dough in butter paper or grease the surface with little butter to keep from sticking
  • Roll the dough and cut the pieces in diamond shape
  • Your kaju katli are ready to eat
