Recipe- Kaju Curry

Kaju Curry (Cashew nuts with gravy)

Want to try a different delicacy for guests coming at your home? Think Kaju Curry, loaded with protein and very tasty curry. You must have had it in restaurants but it is easy to cook at home too. This will be a good food idea for festivals as well. I am describing here its recipe with home available ingredients, try it at home and share your experience.




Ingredients

  •     1 cup Cashew Nuts
  •     1 Onion (Grinded/Puree)
  •     1 Large Tomato (Grinded/Puree)
  •     1 tsp. Ginger-Garlic Paste
  •     1 tsp. Garam Masala Powder
  •     1 tsp Red Chili Powder
  •     ¼ tsp Turmeric Powder
  •     1 cup milk
  •     Coriander Leaves for Garnishing
  •     Oil for frying
  •     Salt to taste
  •     2 tbsp poppy seeds/khus khus
  •     ¼ cup cashew
  •     2 tbsp melon seeds

Method

  • Take cashew nuts, poppy seeds and melon seeds and soak them in water for few hours so they will become soft
  • Now grind them to make a paste
  • Take a pan and heat oil ,add mustard seeds, cumin seeds , ginger garlic paste let them fry and then add grind-ed onion and let cook for few minutes
  • Add the tomato puree, salt and all the spices and continue to fry in medium flame for few minutes till oil
  • separates from the corners
  • Now add the paste we made with cashew, poppy seed and melon seeds and add 1 cup of milk to it
  • Let it cook for few minutes and then add the fried cashews to it
  • Turn flame low and let cook for 5 min and garnish
  • Kaju Currey is ready to be served now with nan, chapati.
