Sprouted Moong/ Mung Salad
Sprouting is the practice of
germinating seeds to be eaten raw or cooked. Sprouted foods are considered to
be the most nutritious foods and are a convenient way to have fresh vegetables
for salads. In any season you can prepare sprouts at home. It is easy to grow
your own sprouts.
Moong/Mung bean sprouts is the
most widely consumed sprout on our planet and has a great nutritional value. It
contains Vitamins A, B, C and Calcium, Iron, Magnesium, Potassium, Amino Acids
Protein: 20% .Moong Beans come from a source which is certified organic and
also are free of cholesterol. Moong Sprouts also contain a high source of
fiber, are easily digestible and contain a high concentration of enzymes
facilitating the digestive process. Sprouted moong will stay fresh in the
refrigerator for almost a week, but only maintain maximum freshness for about
3-4 days, and then will start to grow slimy and decay.
Sprouted moong salad is a very colorful healthy and yet delicious recipe, a very good breakfast option. By adding some fresh fruit and veggies to the sprouted moong you can paint your plate with beautiful colors with a nutritional punch. Ingredients
- 2 Cups sprouted moong/mung beans
- 1 Onion, chopped
- 1 Tomatoe, chopped
- 1 Cucumber (kakari) chopped
- 1 Carrot chopped
- 1 Capsicum (Shimla mirch) chopped
- Lettuce chopped
- Pomegranate (this is completely optional, it adds a sweet touch to your recipe and a good source of fibers, vitamins & potassium)
- 3-4 Tablespoons lemon juice
- 1 Teaspoon sesame (til) seeds
- Salt to taste
- Black pepper (kali mirch)
- Chaat masala
Method
- Take the sprouted moong, tomato, onion, lettuce, cucumber, capsicum, carrot in a large bowl and mix them well.
- Now add salt, black pepper, chaat masala, sesame seeds, and lemon juice as per your taste.
- Toast it until mix well.
