Batata Vada /Aloo Vada (Potato Patty)

A deliciously tasting snack, much savored on a rainy day in India.  Popular all over India, known by different names such as Aloo Vada, Aloo Bonda, and an integral part of daily life line in Mumbai as Vada Pav. Besides potatoes are an all-time favorite of mine and my family for Sunday feast or to cherish a rainy day in monsoon. 


Batata Vada is a popular Indian vegetarian fast food in Maharashtra, India. It literally means potato fritters. The name "Batata" means potato in English. It consists of a potato mash patty coated with chick pea flour, then deep-fried and served hot with savory condiments called chutney. In the south, it is called Potato Bonda.
It can be prepared with easily available ingredients in our home any time. With very quick recipe and low cook time it becomes a very good choice to enjoy a rainy day or simply surprise your family with tasty treat!


For potato filling

  • 2 cups boiled and roughly mashed potatoes
  • 1/2 tsp. mustard seeds
  • 1/2 tsp. cumin seeds
  • few curry leaves
  • 1 onion, finely chopped
  • 2 green chills, finely chopped
  • 1/2 tsp. ginger garlic (adrak-lehsun)  paste (optional)
  • fresh coriander leaves (hara dhania) to garnish
  • salt to taste
  • 1/4 tsp turmeric
  • 2 tbsp cooking oil

For Batter

  • 1 cup gram flour/chickpea flour/besan
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Oil for deep frying


  • In a bowl, add the ingredients (besan, turmeric, salt)  required for making the batter. Slowly add water and make a slightly thick, flowing batter. Batter should be thick enough to coat back of a spoon. Keep aside.


  • Heat 2 tbsp oil in a frying pan, add the mustard seed, add the cumin seeds and let them brown lightly. Add green chills, curry leaves. After 2 minutes add the onions and saute for a couple of minutes till onions are soft and light golden color.
  • Add ginger- garlic paste, turmeric and salt and saute for a few more minutes; then add the mashed potatoes and saute for a couple of minutes

  • Add coriander leaves and turn off the heat and allow the potato mixture cool down
  •  Divide the mixture into equal portion. Make small round balls out of them
  • Heat oil in a deep pan for deep frying, coat each of the potato balls in the gram flour batter and deep fry them until golden brown in color

  • Serve them hot with coriander-mint chutney or tomato sauce and with some fried salted green chilies

Just by adding buns/ Pav or bread you can proceed further to make Vada Paav Mumbai’s very own burger. I hope you enjoy the recepie, once you try do not leave to post your comments and feedback for benefit of all.
