Recipe-Chhole Bhature

Chhole Bhature

Chhole Bhature is a spicy mouth watering dish which can easily prepared in easily at home as well. It is also called Chhola poori since the bhatura resembles a poori. Chhole Bhature can be found as a liked food in all parts of India with some variations. Straight from its origin in Punjab to central India you can have it at food joints. It is a good dish as a part of main course in parties or simply any gathering. The ingredients I use are easily available in every house hold kitchen.

For Bhature

  • All-purpose flour (Maida) -2 cups
  • Semolina (Suji/Rawa)   - ¼ cup
  • Sugar   - ½ tablespoon
  • Yoghurt (Dahi)  -½ cup
  • Oil  -2 tablespoon
  • Oil for deep-frying

For Chhole /Chana

  • Chickpea (Chhole/Chana)   - 2 cup
  • Oil   - 2 tablespoon
  • Cumin seeds   -1 tablespoon
  •  Bay leaves (tej patta)   -2 or 3
  • Ginger –garlic paste   - 1 tablespoon
  • Onion   - 1 finely chopped
  • Green chili    -1 finely chopped
  • Tomatoes -2 (Medium sized) grinded
  • Chhole masala   -2 tablespoons
  •  Chilli powder   - 2 tablespoon
  • Dried mango powder (amchur)- 2 tablespoo
  • Turmeric powder (haldi)    - ½ tablespoon
  • Coriander (dhania) powder   - 2 tablespoon Oil
  • Salt (to taste)
  • Fresh coriander leaves (Hara Dhania)

For Bhature

  • Take a bowl and add All-purpose flour (Maida), Semolina (Suji/Rawa), Sugar, and mix well.
  • Now add Yoghurt (curd or Dahi) and Oil to it, mix well and knead to make a smooth dough. (it is not required to add water as yoghurt and oil make a good mixing base but add as per your requirement),
  • Cover it and allow resting for 3 to 4 hrs (this makes dough fermented and thus prepares a good base for puffing of bhaturas while frying.)
  • Divide it into equal portions and make round balls.
  • Roll out in an oval or round shape.
  • Deep fry them in hot oil till the bhaturas puff up.

(If you want you can also add baking soda to the mixture before kneading to make it more crispy. Even suji (semolina) can also do the work. I personally do not use baking soda though.)

For Chhole

  • Soak the chickpeas in enough water overnight or for 7-8 hours.
  • Drain the water and cook the chickpeas with a pinch of backing soda and salt in a pressure cooker.
  • Now heat oil in a pan or kadhai and add cumin seeds and bay leaves to it.
  • When the seeds crackle add Ginger –garlic paste and green chili and let them cook for 2 minutes.
  • Add the onion, ginger and garlic and sauté till the onion is golden brown.
  • Add tomato puree and cook for five minutes.
  • Now add all the mentioned spices Chhole masala, chilli powder, amchur, turmeric powder, coriander powder, and salt and sauté for two minutes.
  • Add previously cooked chane/Chhole and 1 cup of water and mix well.
  • Simmer for 10 to 15 minutes.
  • Garnish with fresh coriander leaves (Hara Dhania) and Keep aside.

Now serve your bhaturas with chhole and finely chopped onion and lemon. It will enhance the taste and also help in digestion. Serve hot and be ready to win praise of everyone with spicy and tasty home cooked chhole bhature. You can master it in 2-3 times and this cooks easily. Please do not forget to share your experiences.

Arts-Mirror Photo Frame

Mirror Photo Frame

Recycle your Broken Mirror/ Old cd’s

Instead of throwing your broken mirror/ old cd’s away, use them to decorate a picture frame. I always like to “up cycle” things rather than throw them away! You can make a picture frame from cardboard or get some cheap picture frame from store and decorate it.  Always work carefully with broken mirror cd pieces and maintain a safe distance while using them.

  • Broken mirror pieces/ Old cd
  • Glue
  • Glitter Glue
  • Thin cardboard/ picture frame
  • Scissors

  • Bring your broken mirror pieces or Cut the CD up into pieces with the help of scissor (Vary the sizes and the shapes). You can also put mirror in thick layer of papers to break it in pieces.
  • Start gluing them onto the frame, in any pattern you want.
  • Keep applying pieces in this way making sure you leave some space between each piece.

  • Allow the frame to dry.
  • Fill in the areas between the glued pieces with the glitter glue and let dry.

  • And you're done! Your picture frame is ready to display in your home. This makes a very good piece of art and looks very attractive to frame your pictures. Please let me know if you have any suggestion to make this blog better by commenting on posts  or write to Thanks!

Recipe-Batata Vada /Aloo Vada (Potato Patty)

Batata Vada /Aloo Vada (Potato Patty)

A deliciously tasting snack, much savored on a rainy day in India.  Popular all over India, known by different names such as Aloo Vada, Aloo Bonda, and an integral part of daily life line in Mumbai as Vada Pav. Besides potatoes are an all-time favorite of mine and my family for Sunday feast or to cherish a rainy day in monsoon.

Batata Vada is a popular Indian vegetarian fast food in Maharashtra, India. It literally means potato fritters. The name "Batata" means potato in English. It consists of a potato mash patty coated with chick pea flour, then deep-fried and served hot with savory condiments called chutney. In the south, it is called Potato Bonda.
It can be prepared with easily available ingredients in our home any time. With very quick recipe and low cook time it becomes a very good choice to enjoy a rainy day or simply surprise your family with tasty treat!

For potato filling

  • 2 cups boiled and roughly mashed potatoes
  • 1/2 tsp. mustard seeds
  • 1/2 tsp. cumin seeds
  • few curry leaves
  • 1 onion, finely chopped
  • 2 green chills, finely chopped
  • 1/2 tsp. ginger garlic (adrak-lehsun)  paste (optional)
  • fresh coriander leaves (hara dhania) to garnish
  • salt to taste
  • 1/4 tsp turmeric
  • 2 tbsp cooking oil

For Batter

  • 1 cup gram flour/chickpea flour/besan
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Oil for deep frying

  • In a bowl, add the ingredients (besan, turmeric, salt)  required for making the batter. Slowly add water and make a slightly thick, flowing batter. Batter should be thick enough to coat back of a spoon. Keep aside.

  • Heat 2 tbsp oil in a frying pan, add the mustard seed, add the cumin seeds and let them brown lightly. Add green chills, curry leaves. After 2 minutes add the onions and saute for a couple of minutes till onions are soft and light golden color.
  • Add ginger- garlic paste, turmeric and salt and saute for a few more minutes; then add the mashed potatoes and saute for a couple of minutes

  • Add coriander leaves and turn off the heat and allow the potato mixture cool down
  •  Divide the mixture into equal portion. Make small round balls out of them
  • Heat oil in a deep pan for deep frying, coat each of the potato balls in the gram flour batter and deep fry them until golden brown in color

  • Serve them hot with coriander-mint chutney or tomato sauce and with some fried salted green chilies

Just by adding buns/ Pav or bread you can proceed further to make Vada Paav Mumbai’s very own burger. I hope you enjoy the recepie, once you try do not leave to post your comments and feedback for benefit of all.
